Ingredients

Turkey meatballs

  • 500 g turkey mince
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • ½ tsp dried sage
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ¼ tsp ground cayenne pepper
  • 1 tsp salt

Red beans and rice

  • 200 g brown rice
  • 1 tbsp olive oil
  • 1 brown onion, cut into quarters
  • 2 garlic cloves
  • 1 carrot, cut into pieces (4 cm)
  • 1 celery stalk, cut into pieces (4 cm)
  • 1 tbsp tomato paste
  • ¼ tsp ground cayenne pepper
  • 2 tsp fresh thyme, leaves only
  • 1 fresh bay leaf
  • 500 g water
  • 1 tsp Chicken stock paste (see Tips)
  • 400 g canned chopped tomatoes
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ¾ red capsicum, deseeded and cut into pieces (1 cm)
  • 400 g red kidney beans, rinsed and drained (approx. 250 g after draining)
  • 2 spring onions/shallots, cut into thin slices, for garnishing
