  • 8 quails, legs trussed (see Tips)
  • 40 g ghee, softened

Onion and cashew topping

  • 30 g ghee
  • ½ red onion, cut into thin slices
  • 50 g water
  • 1 tsp Vegetable stock paste (see Tips)
  • 50 g raw cashews
  • 4 sprigs fresh coriander, leaves only, roughly chopped
