Ingredients

Pizza

  • extra virgin olive oil for oiling
  • 280 g filtered water
  • 1 tsp dried instant yeast (see Tips)
  • ½ tsp sea salt
  • 1 tsp coconut sugar
  • 250 g spelt flour (see Tips)
  • baker's flour for dusting

Vegetable sauce

  • 1 brown onion cut into quarters
  • 2 garlic cloves
  • 1 tbsp extra virgin olive oil
  • 130 g carrot peeled and cut into pieces
  • 150 g pumpkin peeled and cut into pieces
  • 500 g ripe tomatoes cut into quarters (see Tips)
  • 1 ½ tbsp tomato paste
  • 250 g zucchini cut into pieces
  • 150 g button mushrooms cut into halves
  • 3 sprigs fresh basil leaves only (see Tips)

Assembly

  • extra virgin olive oil for greasing
  • 450 g mozzarella cut into slices
  • extra virgin olive oil for drizzling
  • fresh basil leaves, to serve
