Ingredients

Pizza base

  • 20 g extra virgin olive oil, plus extra for greasing
  • 120 g filtered water
  • ½ tsp dried instant yeast
  • 200 g wholemeal spelt flour
  • ¼ tsp salt
  • 2 tsp nigella seeds

Basil, avocado and hemp pesto

  • 40 g fresh basil, leaves only (approx. 8 large sprigs)
  • 30 g pine nuts
  • 30 g walnuts
  • 30 g hemp seeds (see Tips)
  • 2 garlic cloves
  • 1 avocado, flesh only
  • ½ tsp salt
  • 2 tbsp lemon juice
  • 30 g extra virgin olive oil

Assembly

  • 30 g broccoli, broken into small florets
  • 4 - 5 marinated artichoke hearts, cut into halves
  • 10 pitted green olives, cut into halves
  • 1 spring onion/shallot, cut into thin slices
  • 1 tbsp pine nuts
  • 6 slices vegan mozzarella (approx. 40 g - see Tips)
  • salt, to season
  • ground black pepper, to season
  • extra virgin olive oil, for drizzling
  • rocket, for garnishing
  • micro herbs, for garnishing
