Ingredients

Pulled pork

  • 140 g red onion, cut into halves
  • 20 g olive oil
  • 1 - 2 tbsp taco seasoning (see Tips)
  • 20 g rice malt syrup
  • 50 g apple cider vinegar
  • 40 g Worcestershire sauce
  • 20 g soy sauce
  • 400 g canned chopped tomatoes
  • 50 g tomato paste
  • 900 g pork loin, cut into cubes (3 cm)
  • 1 ½ tbsp cornflour

Salad and assembly

  • 1 red apple, cut into thin slices (see Tips)
  • 1 fennel bulb, cut into thin slices (see Tips)
  • 60 g rocket
  • bread, of choice (see Tips)
  • 1 avocado, flesh only, cut into thin slices
  • sour cream, to serve
  • fresh coriander leaves, to serve
  • 1 lime, cut into wedges (optional)
