Ingredients

  • 500 g plain flour, plus extra for dusting

Filling

  • 100 g red onion, cut into quarters
  • 2 - 3 fresh long green chillies, trimmed
  • 5 sprigs fresh coriander, leaves and stalks
  • 4 sprigs fresh mint, leaves only
  • 2 tbsp lemon juice
  • 1 ½ tsp salt
  • 300 g lamb mince
  • 1 tsp ground black pepper
  • 1 tbsp cumin seeds
  • 1 ¼ tsp ground coriander
  • ½ tsp ground turmeric
  • 3 tsp garlic paste (see Tips)
  • 3 tsp ginger paste (see Tips)
  • 1 tbsp garam masala (see Tips)

Assembly

  • plain flour, for dusting
  • 1250 g vegetable oil, for frying
