Ingredients

  • 100 g sourdough bread cut into slices
  • 2 garlic cloves
  • 1 tsp smoked paprika
  • 120 g extra virgin olive oil
  • 50 g sherry vinegar plus extra to season
  • 600 g heirloom yellow tomatoes
  • 1 yellow capsicum cut into halves and deseeded
  • 1 Lebanese cucumber peeled and cut into pieces
  • 20 g white onion
  • 100 g water
  • 100 g ice cubes
  • 1 tsp salt plus extra to season
  • ½ tsp white pepper plus extra to season

Assembly

  • smoked paprika for garnishing
  • extra virgin olive oil for garnishing
  • 1 Lebanese cucumber peeled, deseeded and cut into thin slices, for garnishing
  • garlic flowers for garnishing (optional)
  • fresh chives for garnishing
