Ingredients

  • 100 g sourdough bread, cut into slices
  • 2 garlic cloves
  • 1 tsp smoked paprika, plus extra for garnishing
  • 120 g extra virgin olive oil, plus extra for garnishing
  • 50 g sherry vinegar, plus extra to taste
  • 600 g heirloom yellow tomatoes
  • 1 yellow capsicum, cut into halves and deseeded
  • 1 Lebanese cucumber, peeled and cut into pieces
  • 20 g white onion
  • 100 g water
  • 100 g ice cubes, plus extra to serve
  • 1 tsp salt, plus extra to taste
  • ½ tsp white pepper, plus extra to taste

Assembly

  • 1 Lebanese cucumber, peeled, deseeded and cut into thin slices, for garnishing
  • garlic flowers, for garnishing (optional)
  • fresh chives, for garnishing
