Ingredients

Dough

  • 150 g butter, cut into cubes (3-4 cm)
  • 180 g full cream milk
  • 50 g fresh yeast, or 3 tsp dried instant yeast
  • 120 g white sugar
  • 500 g plain flour, plus extra for dusting
  • 6 egg yolks (reserve whites for filling)
  • ½ tsp sea salt
  • 1 ½ tbsp rum

Poppy seed filling

  • 420 g poppy seeds
  • 1000 g boiling water, for soaking
  • 50 g almonds
  • 50 g walnuts
  • 150 g white sugar
  • 50 g honey
  • 100 g sultanas
  • 30 g butter
  • 150 g full cream milk
  • 40 g mixed peel
  • 1 ½ tsp natural almond extract
  • ¼ tsp ground cinnamon
  • ½ orange, zest only, no white pith, finely grated
  • 20 g orange juice
  • 2 tbsp rum (optional)
  • ½ tsp sea salt
  • 6 egg whites

Glaze

  • 180 g icing sugar
  • 20 - 40 g orange juice
