  • 1 tsp stock paste
  • 50 g tomato paste
  • 1 tsp white sugar
  • 1 tsp sea salt
  • ¼ tsp ground black pepper
  • 850 g sweet potato, peeled and cut into pieces (2-3 cm)
  • 100 g crème fraîche
  • 100 g feta cheese
  • fresh basil, leaves only, to serve
  • mixed salad leaves of choice
