Ingredients

  • 20 g extra virgin olive oil, plus extra to grease
  • 4 mixed capsicums, cut in half lengthways and seeds removed
  • 80 g Parmesan cheese, cut into pieces (2 cm)
  • 80 g red onion, cut into halves
  • 2 garlic cloves
  • 2 tsp dried oregano
  • 1 tsp dried chilli flakes, mild
  • 250 g turkey mince
  • 30 g tomato paste
  • ½ - 1 tsp sea salt, to taste
  • ¼ tsp ground black pepper
  • 400 g can cannellini beans, rinsed and drained
  • 80 g feta cheese, crumbled
  • 40 g pitted Kalamata olives, sliced
  • 2 tomatoes, deseeded and diced
  • 250 g cherry tomatoes, to serve
  • 100 g mixed salad leaves, to serve
  • 2 tsp balsamic vinegar
  • fresh basil leaves, to garnish
