Ingredients

  • 7 - 8 chicken drumsticks, skin on
  • 1 tsp paprika, sweet
  • ¼ - ½ tsp paprika, hot, to taste
  • ¼ tsp black pepper, ground, to taste, divided
  • 2 ¼ tsp salt, divided
  • extra virgin olive oil, in spray, to fry
  • 4 garlic cloves
  • 10 - 20 g red chilli, long, trimmed and deseeded if preferred
  • 5 sprigs flat-leaf parsley, leaves only, plus extra to garnish
  • 20 g extra virgin olive oil
  • 20 g anchovy fillets, preserved in oil, drained
  • 30 g capers, pickled, drained
  • 700 g tomato passata (see Tip)
  • 200 g water
  • 10 - 20 g freshly squeezed lemon juice, to taste
  • 1 - 2 pinches cinnamon, ground
  • ½ tsp cayenne pepper, ground
  • 1 ½ tsp raw cane sugar
  • ½ tsp black pepper, ground
  • 80 g black olives, pitted, drained
    or 80 g green olives, pitted, drained
