Ingredients

Eggs

  • 4 large eggs, cold
  • water, to fill to 1 liter mark

Shrimp and Asparagus

  • 20 oz water
  • 24 oz large raw shrimp, peeled
  • 1 - 3 tsp Cajun spice mix, to taste
  • 1 bunch asparagus, trimmed, cut into pieces (2 in.)

Dressing

  • 1 oz shallots, in pieces
  • 1 garlic clove
  • 5 oz mayonnaise
  • 2 oz ketchup
  • 2 oz plain Greek yogurt
  • 1 ½ oz lemon juice
  • 1 tsp smoked paprika
  • 1 ½ tsp apple cider vinegar
  • ½ - 1 tsp soy sauce, to taste

Assembly

  • 10 oz iceberg lettuce, chopped
    or 10 oz romaine lettuce, chopped
  • 6 oz cherry tomatoes, halved
  • 1 tbsp capers, rinsed
  • 2 avocados, sliced or diced, to serve (optional)
