Ingredients
Rice
- 1000 g water
- 1 ½ tsp sea salt
- 20 g extra virgin olive oil
- 250 g long grain rice
Shredded chicken
- 1 ½ tbsp soy sauce
- 3 tsp toasted sesame oil
- 250 g skinless chicken breast fillets, cut into long strips (3 cm thick)
Vegetables
- 120 g carrot, trimmed and peeled (1-2 carrots)
- 160 g baby cos lettuce, washed and dried (1-2 lettuce hearts - halved to fit through feeder tube)
- 180 - 200 g Roma tomatoes (approx. 2 totatoes), firm (whole to fit feeder tube)
- 200 g cucumber, unpeeled, ends removed
- 100 g red onion (approx. 1 onion), cut into halves vertically
- 200 g avocado (1 avocado), firm, ripe and peeled (cut to fit through feeder tube)
Yoghurt coriander sauce
- 7 sprigs fresh coriander, leaves only, plus extra to garnish
- ½ tsp sea salt
- 3 pinches ground black pepper
- 250 g natural yoghurt
- 100 g mayonnaise (see Tips)
- 4 tbsp roasted unsalted cashew nuts, to serve
