Biscuit base

  • 60 g unsalted butter, cut into pieces
  • 150 g digestive biscuits, broken into pieces (see Tip)

Lime filling

  • 4 egg yolks
  • 395 g condensed milk
  • 4 limes, zested (no white pith) and juiced (approx. 80 g)
  • 30 g gin

Gin and tonic jelly

  • 3 gelatine leaves (titanium)
  • cold water, for soaking
  • 30 g gin
  • 100 g tonic water
  • 40 g caster sugar
  • 4 limes, zested (no white pith) and juiced (approx. 80 g)

Whipped cream

  • 250 g pouring (whipping) cream
  • 20 g caster sugar
  • 1 lime, zest only, no white pith, for decorating
