Ingredients

  • 90 g hot chilli sauce
  • 90 g soy sauce
  • 1 tbsp Chinese cooking wine
  • 500 - 600 g pork loin steaks, cut into pieces (2-3 cm)
  • 10 sprigs fresh coriander, leaves and stalks
  • 4 sprigs fresh mint, leaves only
  • 40 g lime juice (1 lime)
  • 1 - 2 pinches salt
  • 1 - 2 pinches ground black pepper
  • 80 g coconut chips (see Tips)
  • 50 g sunflower seeds
  • 100 g dried apricots, cut into halves
  • 50 g pepitas
  • 2 garlic cloves
  • 40 g olive oil
  • 1 - 2 baby cos lettuce (approx. 250 g), leaves separated and chopped as desired
  • 6 tortillas, wraps or flatbreads of choice
