Chilli mayonnaise
- 1 fresh long red chilli, deseeded if preferred and cut into halves
- 80 g mayonnaise (see Tips)
- 2 tsp lime juice

- 2 spring onions/shallots, trimmed and cut into thirds
- 2 garlic cloves
- 2 sprigs fresh coriander, leaves only, plus an extra 24 fresh coriander leaves
- 100 g full cream milk
- 50 g plain flour
- 1 tsp baking powder
- 1 egg
- ½ tsp salt
- 2 pinches ground black pepper
- 5 - 6 tbsp vegetable oil, plus extra for frying fritters
