Quick fruit sponge
The title of this recipe says it all. What a quick and versatile dish.
If you want to make it gluten free just substitute for the gluten free flour. You can also replace the rhubarb with any stone fruit, apple or pear of choice.
As the cake bakes the sponge cuddles up to the fruit like a doona. Mmm...
