Ingredients

Fig Jam

  • 200 g dried figs halved
  • 200 g fresh figs halved
  • 50 g water
  • 3 Tbsp chia seeds

Gluten-free Cheddar Pastry

  • 150 g Cheddar cheese cut in pieces (2 cm)
  • 200 g gluten-free plain white flour plus extra for dusting
  • 100 g unsalted butter diced, plus extra for greasing
  • 100 g water
  • 2 pinches fine sea salt

Quiche Filling

  • 80 g Gruyère cheese cut in pieces (2 cm)
  • 80 g Parmesan cheese cut in pieces (2 cm)
  • 80 g mozzarella drained, cut in pieces
  • 80 g Stilton crumbled
  • 400 g firm tofu pressed for 15 minutes (see tip), then broken in pieces
  • 1 Tbsp milk
  • 10 fresh chives finely sliced
