Ingredients

  • 100 g onions, cut in halves
  • 1 garlic clove
  • 20 g olive oil
  • 60 g carrots, cut in pieces
  • 300 g courgettes, cut in pieces
  • 100 g button mushrooms, cut in pieces
  • 500 g tinned chopped tomatoes or fresh tomatoes, cut in quarters
  • ½ tsp salt, plus extra to taste
  • ¼ tsp ground black pepper, adjust to taste
  • 1 tsp dried basil
  • 1 tsp butter
  • 8 fresh basil leaves, torn in pieces
  • 1 - 2 Tbsp fresh parsley, leaves only, chopped (optional)
  • grated Parmesan cheese (optional)
