Ingredients

Spiced pumpkin loaves

  • 500 g water
  • 80 g pumpkin, peeled and cut into cubes (2-3 cm)
  • 2 pieces orange zest, no white pith (1 x 10 cm strips)
  • 120 g butter, softened
  • 80 g soft dark brown sugar
  • 2 eggs
  • 40 g sultanas
  • 80 g currants
  • 20 g desiccated coconut
  • 200 g self-raising flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger
  • 40 g full cream milk
  • 2 tbsp orange juice

Cream cheese frosting

  • 60 g cream cheese, room temperature
  • 20 g unsalted butter, room temperature
  • 80 g icing sugar
  • 1 tsp natural vanilla extract
  • 1 tbsp full cream milk
  • 1 pinch ground cinnamon, for sprinkling
