Ingredients

  • 40 g spring onions, roughly chopped
  • 15 g fresh ginger root, sliced (2 mm)
  • 1 ½ garlic cloves
  • 60 g carrots, cut in pieces
  • 50 g celery stalk, cut in pieces
  • 20 g oil
  • 200 g beef mince
    or 200 g pork mince
  • 1 tbsp fermented soybeans (optional)
  • ½ - 1 tsp ground Sichuan pepper
  • 25 g light soy sauce
  • 15 g Shaoxing rice wine
  • 400 g canned tomatoes
  • ½ - ¾ tsp chicken stock paste
  • 20 - 25 g Chinese chilli oil, with fried chilli, plus extra for drizzling
  • 1 tbsp brown sugar
  • 20 g tahini
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • 160 g spaghetti pasta
  • water, for cooking pasta
  • ½ tsp baking soda
  • peanuts, roasted, unsalted, to garnish
  • spring onions, sliced (1 mm), for garnishing
  • sesame oil, toasted, for drizzling
