Ingredients

  • 4 dried pitted prunes
  • 500 g fresh dark red plums, stones removed
  • 2 garlic cloves
  • 1 cm piece fresh ginger
  • ¼ tsp ground cinnamon
  • 1 tsp star anise
  • ½ tsp Chinese five spice
  • 100 g raw sugar
  • 60 g apple cider vinegar
  • 1 tbsp tamari
  • 80 g water
  • ½ tsp sea salt

Meatballs

  • 1 slice bread, roughly torn
  • 3 spring onions/shallots, cut into quarters
  • 500 g pork mince
  • 1 egg
  • ¼ tsp ground black pepper

Plum glaze

  • 100 g water
  • 70 g tamari
  • 1 tbsp Sriracha® sauce
  • 20 g rice wine vinegar
  • 10 g cornflour

Rice

  • 480 g water
  • 20 g peanut oil
  • 1 tsp Meat stock paste (see Tips)
  • 300 g jasmine rice
