Ingredients

Coffee Spice Rub

  • 1 tbsp ancho chili powder
  • 1 tbsp ground smoked paprika
  • 1 tbsp ground cumin
  • 1 tbsp brown sugar substitute, e.g. Sukrin Gold
  • 2 tsp coffee beans
  • 1 tsp dried thyme
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ½ tsp ground cayenne pepper
  • 2 - 4 skirt steaks (5-8 oz ea.)
  • salt, to season, to taste

Caper Salsa

  • 1 oz fresh flat leaf parsley, leaves and tender stems
  • 1 garlic clove
  • 1 lemon, thin peel only, no pith, plus 1 tbsp juice
  • 1 tsp capers, drained
  • ½ fresh red chili
    or ½ tsp dried red pepper flakes
  • 1 tsp Dijon mustard
  • 2 oz extra virgin olive oil
  • salt, to taste
  • ground black pepper, to taste
  • 1 tbsp extra virgin olive oil
    or 1 tbsp avocado oil
