Ingredients

  • 800 g beef brisket, trimmed and cut into pieces (4 cm)
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp cayenne pepper
  • ½ tsp sea salt
  • 1 - 2 pinches ground black pepper
  • 20 g fresh coriander roots and stalks (leaves reserved for garnishing - see Tips)
  • 20 g olive oil
  • 200 g red onion, cut into wedges (approx. 4 cm)
  • 1 - 2 fresh jalapeño chillies, deseeded if preferred and cut into pieces (optional)
  • 180 g capsicums (red or yellow), deseeded and cut into pieces (2.5 cm)
  • 2 tsp cocoa powder
  • 1 tbsp red wine vinegar
  • 400 g canned whole tomatoes
  • 1 tsp instant granulated coffee
  • 400 g canned kidney beans, rinsed and drained (approx. 250 g after draining)
  • sour cream, to serve
