  • 450 g water
  • 1 cinnamon stick
  • 1 lemon, thin peelings of skin only
  • 1 tsp dark brown sugar
  • 1 pinch fine sea salt

Compote

  • 400 g apples, peeled, cored, cut in pieces (2 cm)
  • 50 g sugar
  • 1 pinch ground cinnamon

Assembly
