Ingredients

Lamb patties

  • 70 g red lentils
  • 1700 g water
  • 1 tbsp ghee (see Tips)
  • 1 brown onion, cut into quarters
  • 2 fresh long red chillies, trimmed and cut into halves
  • 300 g lamb mince
  • 1 tsp cumin seeds
  • 2 tsp ginger paste (see Tips)
  • 1 tsp garlic paste (see Tips)
  • 1 tsp garam masala (see Tips)
  • ½ tsp green mango powder (see Tips)
  • 70 g breadcrumbs
  • 2 tsp salt
  • 5 eggs
  • 1 tbsp vegetable oil, plus extra for greasing
  • 10 cm piece fresh ginger, peeled and cut into julienne
  • 20 g white vinegar

Assembly

  • 6 bread rolls, cut into halves horizontally
  • tamarind chutney, for garnishing (see Tips - optional)
  • 1 fresh tomato, cut into slices (optional)
  • ½ cucumber, cut into slices (optional)
  • 1 fresh long red chilli, trimmed and cut into thin slices (optional)
