  • 80 g Parmesan cheese, crust removed and cut into cubes (3 cm)
  • 2 garlic cloves
  • 1 long red chilli, deseeded if preferred
  • 40 g extra virgin olive oil
  • 2 Tbsp tomato purée
  • 1 Tbsp pickled capers
  • 5 tinned anchovy fillets
  • 2 pinches dried oregano
    or 2 Tbsp fresh oregano, leaves only, finely chopped
  • 100 g Kalamata olives, pitted
  • 400 g tinned chopped tomatoes
    or 400 g tomatoes, fresh, chopped
  • 850 g water
  • 500 g dried spaghetti, broken into halves
  • 1 pinch fine sea salt, to taste
  • 1 pinch ground black pepper, to taste
  • 5 g fresh parsley leaves, for garnishing
