Ingredients

Meatballs

  • 30 g Parmesan cheese, cut into pieces (3 cm)
  • 2 - 3 sprigs fresh dill, leaves only
  • 2 garlic cloves
  • 2 slices bread (approx. 60 g), torn into pieces
  • 60 g brown onion, cut into quarters
  • ¼ tsp ground allspice
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground black pepper
  • ½ tsp sea salt, plus extra to season
  • 1 egg
  • 500 g lean beef mince
  • 30 g plain flour
  • 400 g water
  • 3 tsp Meat stock paste, to taste (see Tips)
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 70 g salted butter, cut into pieces
  • 800 g floury potatoes, red and blue varieties, cut into pieces (1 cm)
  • 100 g pouring (whipping) cream
  • 150 g broccolini, trimmed and cut in half lengthways
  • 200 g carrots, cut into slices
  • 1 - 2 tbsp milk
  • ¼ tsp ground nutmeg (optional)
  • lingonberry jam or cranberry sauce, to serve (see Tips)
