Ingredients

  • 100 g Parmesan cheese cut into pieces (3 cm)
  • 1000 g water
  • 1000 g new baby potatoes (see Tip)
  • 2 tbsp extra virgin olive oil to drizzle
  • ½ tsp sea salt
  • ½ tsp ground black pepper

Whipped feta

  • 200 g Danish feta broken into pieces
  • 50 g cream cheese room temperature
  • 50 g pouring (whipping) cream
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 60 g rocket leaves
  • 2 spring onions/green onions thinly sliced

Green ranch dressing

  • 1 garlic clove
  • 30 g fresh baby spinach leaves
  • 20 g fresh chives
  • 10 g fresh dill
  • 1 fresh green chilli deseeded, cut in halves
  • 50 g Greek-style natural yoghurt
  • 100 g sour cream
  • 40 g extra virgin olive oil
  • 40 g freshly squeezed lime juice
  • 1 tsp seeded wholegrain mustard
  • 2 pinches sea salt
  • 2 pinches ground black pepper
