- 20 g extra virgin olive oil
- 15 fresh curry leaves
- ½ tsp black mustard seeds
- 270 g water
- 300 g potatoes, cut into cubes (1- 2 cm)
- 250 g canned chopped tomatoes
- ½ tsp sea salt
- 1 tsp garam masala
- 500 g mixed vegetables of choice (see Tips)
- 2 pinches saffron threads
- 2 tbsp milk
- ½ bunch fresh coriander, leaves only, to garnish
