Ingredients

  • 450 g konjac noodles
  • 15 g dried shiitake mushrooms
  • 4 cm piece fresh ginger
  • 2 fresh long red chillies trimmed and cut into thirds, plus extra sliced to garnish
  • 3 spring onions/green onions trimmed and cut into thirds, plus extra sliced to garnish
  • 2 tbsp soy sauce reduced salt
  • 2 tsp sesame oil
  • 1 tbsp white (shiro) miso paste
  • 1500 g water
  • 400 g skinless chicken breast fillet cut into 8 pieces
  • 2 corn cobs husks and silks removed
  • 100 g frozen shelled edamame beans thawed
  • 500 g bok choy (approx. 1 bunch), cut into pieces
  • 2000 g boiling water
  • 2 tsp togarashi powder
  • 10 sprigs fresh coriander leaves only, chopped
