Ingredients

  • 2 tsp smoked paprika
  • lemon peel (no white pith) of 1 lemon
  • 2 spring onions/green onions trimmed and cut into thirds
  • 1 garlic clove
  • 800 g canned cannellini beans no-added salt, rinsed and drained
  • ground black pepper to taste
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp extra virgin olive oil
  • 60 g baby kale leaves finely sliced
  • 4 eggs chilled
  • 1700 g water
  • 2 tbsp white vinegar
  • 4 slices seeded wholemeal bread (58 g each), toasted (see Tips)
  • 1 avocado flesh only
  • 100 g cherry tomatoes cut into halves
