  • 3 garlic cloves
  • 20 g rapeseed oil
  • 250 g tomato passata
  • 120 g water
  • 90 g white wine vinegar
  • 70 g raw cane sugar
  • 70 g mustard
  • 30 g Worcestershire sauce
  • 1 - 1 ½ tsp chilli powder
  • 2 tsp smoked paprika
  • ¼ tsp ground black pepper
  • 1 tsp salt

Pork ribs

  • 700 g pork spare rib, cut in pieces (3 cm x 10 cm, see tip)
  • 15 g fresh root ginger, cut in round slices (2 mm)
  • 400 g water
  • 600 g potatoes, cut in pieces (3 cm)
  • ½ tsp salt
  • rapeseed oil, for frying
