Ingredients

Dough

  • 100 g water
  • 80 g white wine
  • 60 g lard
  • 25 g olive oil
  • 25 g fresh yeast, crumbled
  • 1 pinch sugar
  • 500 g flour
  • 2 eggs (53-63 g each)
  • 10 g salt

Marinated meat

  • 600 g pork loin, sliced (approx. 2 cm thick, 5 cm x 5 cm)
  • 250 g water
  • 1 tsp salt
  • 1 tsp sweet paprika powder
  • ½ tsp ground black pepper

Eggs

  • 4 eggs (53-63 g each), cold
  • water, to fill to 1 l mark

Assembly

  • 150 - 200 g chorizo Iberico, cut in slices (0.5 cm)
  • 100 g Iberian ham, thinly sliced
  • 1 egg yolk, beaten
