Ingredients

  • 250 g couscous
  • 400 g water
  • 1 tsp ras el hanout (see tip)
  • 1 tsp fine sea salt
  • 100 g dried apricots, pitted
  • 60 g blanched almonds
  • 400 g onions, halved
  • 200 g carrots, cut in pieces
  • 20 g olive oil, plus 2 Tbsp
  • 500 g lamb meat
  • 200 g aubergines
  • 100 g tinned chopped tomatoes
  • ½ vegetable stock cube (for 0.5 l)
    or 1 tsp vegetable stock paste, homemade
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • 2 pinches saffron threads
    or 1 tsp ground turmeric
  • 1 - 2 tsp lemon juice, to taste
  • ½ tsp ground cumin
  • 2 pinches ground black pepper
  • 40 - 50 g honey, to taste
  • ½ bunch fresh coriander, leaves only, chopped (see tip)
    or ½ bunch fresh parsley, leaves only, chopped (see tip)
