Ingredients

Sweet Chilli Sauce

  • 2 Tbsp chilli sauce
  • 1 Tbsp tomato ketchup
  • 30 g sugar
  • 100 g water
  • ½ tsp cornflour
    or ½ tsp potato starch

Steamed Sticky Rice with Pork

  • 450 g white glutinous rice, short-grain
    or 450 g white short grain rice (e.g. sushi rice)
  • water, plus extra for soaking
  • 50 g soy sauce
  • 30 g sugar
  • 1 pinch ground white pepper
  • 200 g pork meat, lean, sinew free, cut in small strips (5 cm x 1 cm x 0.5 cm)
  • 30 g vegetable oil
  • 12 - 15 dried shiitake mushrooms (approx. 20 g), soaked to soften, cut in strips
    or 20 g dried mushrooms, soaked to soften, cut in strips
  • 50 g dried shrimp (optional)
  • 600 g water
  • 5 sprigs fresh coriander, roughly chopped, to garnish
  • 10 g roasted peanuts, unsalted, roughly chopped, to garnish
