  • 7 - 8 fresh curry leaves
  • 2 tbsp coriander seeds
  • 1 tsp fenugreek seeds
  • 2 tbsp coconut oil
  • 2 garlic cloves
  • 5 - 10 fresh long red chillies, trimmed and cut into halves
  • 1 tbsp ginger paste (see Tips)
  • 1 carrot, cut into pieces (2 cm)
  • 5 fresh tomatoes (approx. 560 g), cut into quarters and deseeded
  • 1 tsp asafoetida (see Tips)
  • 1 tsp salt
  • 2 tsp sugar
