Ingredients

Dough

  • 140 g all-purpose flour
  • 115 g almond pulp from homemade almond milk (see Tip)
  • ½ tsp salt
  • 70 g unsalted butter, diced, frozen
  • 1 large egg
  • 2 - 3 tbsp ice cold water, as needed

Herbed Cheese Filling

  • ½ lemon
  • 170 g goat's cheese, crumbled
    or 170 g ricotta cheese, crumbled
  • 30 g extra virgin olive oil
  • 1 tbsp mixed herbs, dried, thyme, rosemary, chives
  • ½ tsp garlic powder
  • ½ tsp salt, to taste
  • ⅛ tsp ground black pepper, to taste

Roasted Tomatoes

  • 450 g cherry heirloom tomatoes
  • 1 tbsp extra virgin olive oil, plus extra to brush
  • ¼ tsp salt, to taste
  • ⅛ tsp black pepper, ground, to taste

Assembly

  • everything bagel seasoning
  • fresh basil leaves, to garnish
