Coffee Spice Rub

  • 1 tbsp ancho chilli powder
  • 1 tbsp paprika, smoked, ground
  • 1 tbsp cumin, ground
  • ½ tsp cinnamon, ground
  • 1 tsp coriander, ground
  • 1 tbsp brown sugar substitute, e.g. Sukrin Gold
  • 1 tsp thyme, dried
  • ½ tsp cayenne pepper, ground
  • 2 teaspoon coffee bean, roasted
  • 2 - 4 beef skirt (140 g-225 g ea.)
  • salt, to season, to taste

Caper Salsa

  • 30 g flat-leaf parsley, leaves and tender stems
  • 1 lemon, thin peel only, no pith, plus 1 tbsp juice
  • 1 garlic clove
  • 1 tsp caper, pickled, drained
  • 1 tsp Dijon mustard
  • 60 g extra virgin olive oil
  • salt, to taste
  • ½ red chilli, fresh
    or ½ tsp red pepper flake
  • black pepper, ground, to taste
  • 1 tbsp extra virgin olive oil
    or 1 tbsp avocado oil
