  • 700 g plums ripe but firm, halved, stones removed (see Tip)
  • 1 lemon
  • 85 g sugar plus 1 tbsp for plums
  • 1 tsp vanilla extract, natural
    or ½ vanilla pod seeds scraped out
  • 2 large eggs
  • 100 g whole milk
  • 60 g heavy cream, 35% fat
  • 65 g all-purpose flour
  • ¼ tsp salt
  • 1 - 2 tbsp icing sugar to dust
