  • 100 g yellow onions
  • 30 g green capsicum, deseeded
  • 30 g red capsicum, deseeded
  • 3 stalks fresh lemongrass, white part only, bruised
  • 350 g parboiled basmati rice, rinsed
  • 100 g fresh pineapples, cut in cubes (2 cm x 2 cm)
  • 450 g water
  • 4 tbsp nam prik pao (Thai chilli paste)
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp chilli powder
  • 2 fresh green limes, juice only
  • 1 sprig fresh coriander, leaves only, to garnish
