  • 1 orange thin peelings of skin and juice (approx. 70 g)
  • 90 g raisins
  • 90 g sultanas
  • 90 g dried apricots halved
  • 80 g glacé cherries halved
  • 50 g mixed candied peel
  • 80 g brandy plus extra for lighting if desired (optional)
  • 100 g unsalted butter soft, plus extra for greasing
  • 90 g dark brown muscovado sugar
  • 2 large eggs
  • 90 g self-raising flour
  • 100 g suet
  • 40 g flaked almonds
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1 tsp ground ginger
  • 2000 g boiling water plus extra as needed
