  • 500 g pork fillet, cut into cubes (3 cm), slightly frozen
  • ¼ tsp ground ginger
  • ¼ tsp ground coriander
  • ¼ tsp salt
  • ½ tsp ground black pepper
  • 1 tsp sesame oil
  • 2 tbsp cornflour
  • 1 tbsp soy sauce
  • 1 egg yolk

Assembly

  • 1 egg, separated
  • 40 currants, flattened to make eyes
  • 2 tsp pouring (whipping) cream
