  • 1 tsp natural vanilla extract
  • 3 large eggs
  • 170 g coconut milk
  • 60 g rum
  • 30 g coconut, shredded, unsweetened

Pineapple Filling

  • 570 g canned crushed pineapple, in juice, drained
  • 60 g sugar
  • 1 tbsp cornstarch

Frosting

  • 450 g heavy whipping cream, 30-40% fat
  • 70 g icing sugar
  • 1 tsp natural vanilla extract
  • 1 tsp coconut extract

Assembly

  • pineapple, fresh slices, to decorate
  • coconut, flaked, unsweetened, to decorate
  • pineapple, fresh crown, to decorate (optional)
