  • ½ - 1 oz extra virgin olive oil
  • 1 oz pickled capers
  • 7 oz raw beets (approx. 2 small beets), peeled and quartered
  • 5 oz radishes (approx. 4)
  • 4 slices whole grain bread toasted (see Tip)
  • 8 oz fresh baby spinach to serve
  • 2 tbsp fresh chives chopped
  • ground black pepper to season
