  • 1000 g floury potatoes (e.g. Maris Piper, King Edwards, see tip)
  • 2100 g water, plus extra for soaking
  • 30 g unsalted butter, diced
  • 60 g milk
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper
  • 250 g onions, quartered
  • 200 g carrots, peeled, cut in pieces (2 cm)
  • 10 g olive oil
  • 50 g celery, cut in pieces (2 cm)
  • 2 garlic cloves
  • 500 g beef mince (10% fat), broken in pieces
  • 15 g plain flour
  • 1 heaped tsp beef stock paste, homemade
    or 1 beef stock cube (for 0.5 l)
