  • 220 g white bread flour, plus extra for dusting

  • 10 g fresh yeast
    or 5 g dried yeast
  • 50 g whole milk
  • 15 g sugar (caster sugar)
  • 1 large egg
  • 1 tsp squid ink, frozen
  • 40 g unsalted butter
  • 1 pinch salt
  • 70 g oat flakes
    or 70 g sesame seeds, any colour

Burger Fillings

  • 100 g heavy whipping cream, 30-40% fat
  • 100 g cream cheese (eg. Philadelphia)
  • 30 g lemon juice
  • 2 tbsp fresh chives, finely chopped
  • 2 pinches salt, or to taste
  • 2 pinches Sichuan peppercorns, or to taste
  • 3 sprigs fresh dill
  • 3 sprigs flat-leaf parsley, leaves only
  • 5 fresh basil leaves
  • 1 sprig fresh cilantro, leaves only
  • 10 g arugula
  • 15 g olive oil
  • 6 slices smoked salmon, cut in strips
  • 6 slices haddock fillet, smoked, cut in strips
