  • 600 g floury potatoes (e.g. Maris Piper, King Edward, approx. 4 small potatoes), peeled, trimmed if necessary to fit in feeder
  • water, to cover sliced potatoes
  • 40 g unsalted butter, plus 1 Tbsp for baking
  • ½ fish stock cube (for 0.5 l), crumbled
    or ½ tsp fish stock paste, homemade
  • ½ tsp ground black pepper
  • 300 g double cream
  • 600 g white fish fillet, skinless, firm (e.g. cod, grouper, haddock)
  • ½ tsp fine sea salt
  • ½ tsp ground black pepper
  • 2 lemons, 1 finely grated zest only, 1 halved for serving
