Ingredients

  • 600 - 650 g whole chicken legs (approx. 2 whole legs), cut in pieces (4 cm)
  • 50 g light soy sauce
  • 50 g oyster sauce
  • 30 g dark soy sauce
  • 1 tsp white pepper powder
  • 1 tsp sesame oil
  • 3 garlic cloves
  • 20 g fresh ginger
  • 20 g salted fish, toasted (see tips), cut in small pieces
  • 20 g cooking oil
  • 5 dried shiitake mushrooms, soaked to soften, stems removed, cut in slices
  • 100 g Chinese sausages (approx.. 2 sausages), casing removed, cut in thin slices
  • 450 g water
  • 30 g Chinese rice wine (Shaoxing Hua Tiao)
  • ½ tsp sugar
  • 350 g parboiled rice, Basmati or Bario, rinsed
  • 1 - 2 sprigs spring onions, chopped, to garnish
