Ingredients

  • 12 dried lasagna noodles

Pumpkin Sauce

  • 3 ½ oz Parmesan cheese, cubed
  • 3 ½ oz mozzarella cheese, cubed
  • 2 garlic cloves
  • 1 oz all-purpose flour
  • 1 oz unsalted butter, cubed
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 16 oz small sugar pumpkin, peeled, de-seeded and cubed (1 in.)
    or 16 oz kabocha squash, peeled, de-seeded and cubed (1 in.)
  • 10 oz chicken stock
  • 3 oz heavy whipping cream
  • 1 oz maple syrup

Turkey Filling

  • 4 oz yellow onion, in pieces
  • 2 garlic cloves
  • 3 fresh sage leaves, large
    or 6 fresh sage leaves, small
  • ½ oz extra virgin olive oil
  • ½ tsp salt, to taste
  • 20 oz ground turkey, broken in pieces
  • 12 oz ricotta cheese

Lasagna

  • 2 oz fresh baby spinach
